Why is Kiwi a Special Fruit?
Apparently kiwi, besides being a delicious fruit with excellent levels of potassium, vitamins C and E and fiber, can also help with minor burn accidents. The high vitamin C content can help to promote collagen production and aid healing, once the mild burn is no longer painful to the touch. RECIPE FOR A SUMMER SALAD
8 cups of spinach leaves
½ cup of chopped walnuts
8 – 10 medium size strawberries, halved
2 kiwis, peeled and sliced
½ cup blueberries
(Makes 4 servings)
¼ cup soybean oil
1/8 cup walnut oil
3 tablespoons raspberry vinegar
2 ½ tablespoon strawberry or raspberry all fruit jam
Make dressing ahead of time and refrigerate
Combine salad greens and fruit in a bowl and serve with dressing on the side. Use about 3-4 tablespoons of dressing per single salad portion.
