What is an easy way to bulk up the nutritional value of my dinner meals?

If you want to make some easy changes that will boost the nutrient value of the meals you are eating, then consider adding vegetables or fruit to the recipe. You can puree cooked vegetables and simply add them to sauces or soups. You can add vegetables to stews and pasta dishes. You can add pureed fruit or cut up fruit to certain muffin and baked goods recipes. You can top cereal, waffles and yogurt with fruit. You can add fruit and sometimes vegetables to shakes and smoothies. You can add sautéed or fresh vegetables to egg dishes and quiche recipes.

Also consider adding beans to soups, stews, egg dishes, salads. Finally, use ground or chopped nuts in salads, on cereal and waffles, in salads and as a topping on a smoothie.
