Take Out the Mayo and Make Vinegar Slaw Instead

The typical cole slaw recipes are calorie and fat laden because of one ingredient – the mayonnaise.  Swap it out for vinegar, and you get a savory slaw that is significantly lower in calories and unhealthy fat.  Cider vinegar is one of the best choices for a vinegar slaw.  Here’s an easy-to-follow recipe that take 5 minutes to prep.

3-4 cups shredded Napa cabbage

1 cup shredded carrots

2 tablespoons cider vinegar

1 teaspoon of sugar or comparable sweetener

½ teaspoon salt

4 thinly sliced scallions

(Optional crunchy topping of ¼ cup sunflower seeds or roasted edamame beans)

Mix cabbage and carrots in a large bowl.  In a separate measuring cup, mix vinegar, salt, sugar and scallions.  Pour into cabbage and toss well.  Top with sunflower seeds or roasted edamame beans.

You can prep this dish 24 hours ahead of time.  Just add the crunchy topping when you are ready to serve.
