Super Healthy Tuna Salad

  • 8 ounces of tuna (packed in water), drained well
  • 1 cup garbanzo beans, drained well and rinsed
  • 1 cup cherry tomatoes, cleaned and halved
  • 2 large stalks of celery, cleaned and diced
  • ½ head of red cabbage, cleaned and shredded
  • 1 red pepper, cleaned and diced
  • 1 green pepper, cleaned and diced
  • 20 green beans, cleaned and cut into 1 inch pieces
  • ½ cup shredded carrots
  • Mix ingredients well and then toss with dressing below


  • 2 TBSP extra virgin olive oil
  • 2 TBSP red wine vinegar
  • 1 TBSP coarse grain mustard
  • Salt and pepper to taste
  • Whisk together before adding to salad
