Summer Salad with Tangerines and Blueberries

Seedless tangerines and blueberries are chock full of flavor and antioxidants. Add grilled fish, shellfish, chicken or edamame beans to make it a fabulous summer meal instead of just a side salad.

Summer Salad with Tangerines and Blueberries


½ lb. of mixed greens

¼ cup of mint leaves

½ cup of blueberries

2 seedless tangerines, peeled and sectioned

(Optional: Add a serving of protein to each salad half)

Ingredients for dressing

1/2 cup of nonalcoholic apple cider

1 teaspoon Dijon mustard

¼ cup vegetable oil

2 tablespoons of chopped parsley


Mix salad greens and fruit together in a bowl. In a separate small bowl, whisk together the dressing ingredients. Drizzle over salad and refrigerate the rest.
