Recipe: Polenta Stuffed Bell Pepper with Salsa

Can’t decide on what to have for dinner tonight? According to the New York Times, eating polenta is a great way to add more “iron, magnesium, phosphorus, zinc and vitamin B6” into your diet. Try this spicy take on polenta:

Polenta Stuffed Bell Pepper with Salsa

Salsa
Ingredients:

  • 3 medium tomatoes
  • ½ cup green onion
  • ½ lime
  • 1 garlic clove
  • A pinch of diced jalapeno
  • 1 sprig cilantro

Directions:
Chop all of ingredients together and mix. Add lime and salt to taste

Bell Pepper

  • 1 red pepper
  • ¼ cup walnuts
  • 1/2 onion
  • 1 clove garlic
  • A pinch of salt

Directions:
Toast walnuts in butter and then sauté with other ingredients until cooked.

Polenta
Ingredients:

  • ½ roll polenta
  • ¾ cup walnuts
  • 1 egg
  • Directions
  • Dip polenta cakes in egg and walnuts mixture; sear both sides of polenta until toasted.
