This maple roasted root veggies dish is on the top list for the Holidays. We do not always respect the “at least half of the plate should be veggies” rule during this joyous time of the year, we trust you will forgive us! Why not bring this delicious dish to the buffet? Those veggies are super healthy carbs and they offer a multitude of health benefits like fiber, vitamin A, vitamin C, potassium, manganese, you name it, the list is endless. The sweetness and the spices make this dish very festive and it allows to #eattherainbow!

Maple Roasted Root Veggies

  • 2 sweet potatoes, scrubbed well
  • 4 rainbow carrots
  • 4 parsnips, peeled
  • Olive oil
  • 3 tbsp maple syrup
  • 1 teaspoon regular or smoked paprika (I prefer smoked)
  • 1⁄2 teaspoon cayenne pepper
  • 6 sprigs of fresh thyme
  • Salt & pepper


  1. Preheat the oven to 400 F (200 C)
  2. Cut the sweet potato into wedges and cut the carrots and parsnips lengthways.
  3. Place in large baking tray in a single layer, or spread them over 2 trays depending on the size of the oven.
  4. Drizzle with olive oil & maple syrup, then sprinkle the paprika and cayenne pepper, and add the thyme – Toss everything together.
  5. Roast for 45-55 minutes, turning once or twice in that time (not a big deal if you forget!!). The veggies should be golden and sticky, with edges that are slightly crisp. It is so yummy!
