Let’s Marinate and Grill!!

Summer is the perfect time to grill fruits, vegetables, chicken (skinless of course), lean red meats, fish and tofu. The key is to marinate your foods well, keep basting during the grilling, keep the flames a bit lower so you don’t char the food, and consider starting the cooking process by initially baking items for about 10-15 minutes in the oven, and then transferring your foods to the grill for the finished smoked flavor. Of course, marinades are the key to robust, juicy flavor. Here’s a delicious and easy marinade, with a bit of a Greek flair. It’s perfect for chicken or a mild white fish.

Combine:

  • ½ cup olive oil
  • 1 cup fresh squeezed lemon juice
  • 4 garlic cloves, peeled and minced
  • ¼ cup fresh chopped oregano
  • ¼ cup finely chopped Italian parsley
  • 2 teaspoons smoked paprika

Directions:
Add ingredients to a jar with a top. Shake well to blend. Marinate chicken or fish and allow marinade to sit for at least 30 minutes before grilling. Continue to baste while grilling.
