Lemon-Thyme Halibut with Sautéed Green Beans

  • 2 tbsps Olive Oil
  • 1 fl oz Lemon Juice
  • 1 clove Garlic
  • 1 tsp leaf Dried Thyme Leaves
  • 1 1/4 lbs Halibut
  • 16 oz Green String Beans
  • 2 tsps Lemon Zest
  • 4 tbsps Butter


1. For fish: Sprinkle fish with salt, pepper then make a paste with 1 Tbsp lemon juice, minced garlic and thyme. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.

2. Cook fish until just cooked through, about 4 minutes per side. Transfer to a plate, add remaining lemon juice, and cover to keep warm.

3. Sauté green beans in the same skillet with the remaining 1 Tbsp oil and 2 tsp lemon zest.  Season with salt and freshly ground black pepper and cook until tender-crisp; about 5 minutes.  Serve with the halibut topped with 1 Tbsp butter.
