How do I get my potato loving family to give up some servings of this carb?

When you want to wean a child off whole milk it is sometimes easier to begin diluting the whole milk with low fat or skim milk until they adjust to the taste of less rich milk. The same tactic can be used with your family. One fabulous side dish you can make is a mashed potatoes and cauliflower dish.


  • 1 small head of cauliflower, cut into 1 inch florets
  • 1 ½ pounds of creamery potatoes (or Yukon Gold)
  • 2/3 cup of 1% milk
  • Pinch of salt Fresh ground pepper to taste

Scrub the potatoes and cut them into about 3 inch pieces and steam them in a steamer basket for about 10-15 minutes. Add the cauliflower pieces and continue to steam till potatoes and cauliflower pieces are tender (about another 15 minutes). Heat the milk till very warm and then mix with potatoes in a large bowl. Mash the bowl contents with a potato masher till smooth. Add salt and pepper and serve warm.
