Healthy and Easy Recipe: Quiche in a Cup
A cup, microwave and some simple ingredients are all you need for this quick and healthy light dish, perfect for any meal of the day!
A microwavable cup
1 large egg
1 tablespoon low fat milk
1 teaspoon vegetable oil
1 teaspoon minced fresh herbs (consider basil, green onions, tarragon)
Salt/pepper to taste (or use a product like Mrs. Dash to reduce use of sodium)
Whisk all the ingredients and then gently place four halved grape tomatoes on the top surface, and some cubes of whole grain bread. Microwave on high for 60 seconds until you see the top puffing up and eggs are set. You can test the eggs by sliding a toothpick gently into the center. It should come out clean.
Optional: You can add a bit of low fat grated cheese to the topping.
