Greek Salad

Ingredients:

1 red pepper, chopped
2 on-the-vine or 1 large tomato, chopped
1 cucumber, chopped
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 tablespoon fresh lemon juice
Feta cheese – quarter cup.
5 or 6 pitted Kalamata olives, cut in half

Directions:

  • Chop above ingredients and put into bowl
  • Add olive oil, vinegar and lemon juice and toss.
  • Crumble and gently mix in feta cheese and olives and serve!
