Freekah is made from young, green wheat that is sun dried and then roasted, mashed and dried again.  It’s a popular ingredient in meat dishes in the Middle East and in Africa, while in the US you will mostly find it in cereals.  It’s got a nutty, crunchy texture and taste, making it perfect for a side dish.

Freekah has a low glycemic index and a good dose of fiber, protein, potassium, magnesium, iron, zinc and selenium per serving.  It also has very little fat content, making it a nutritious and filling, but lower calorie grain carbohydrate- perfect for weight loss.  Check out to find a store near you selling this flavorful side dish.
