Freekah is made from young, green wheat that is sun dried and then roasted, mashed and dried again.  It’s a popular ingredient in meat dishes in the Middle East and in Africa, while in the US you will mostly find it in cereals.  It’s got a nutty, crunchy texture and taste, making it perfect for a side dish.
