Fresh Tomato Salsa Recipe
4 pounds vine-ripened red and/or orange tomatoes (about 5 medium tomatoes)
1/2 medium onion (preferably white)
1 cup fresh cilantro sprigs
2 fresh Serrano or jalapeno peppers, seeded and chopped
2 teaspoons minced garlic
2 teaspoons sugar
3 tablespoons fresh lime juice (about 1 lime)
Kosher salt and freshly ground black pepper
Cut tomatoes in quarters and seed them. Then dice and transfer to a bowl.
Finely chop onion to measure 1/2 cup and chop cilantro.
Stir chilies, onion, cilantro, and garlic into bowl with tomatoes and add sugar and lime juice.
Season with salt and pepper.
Serve with corn tortilla chips.
Serve with whole grain chips or pita bread for a healthier take on the recipe!
