Dr. Oz’s Chia-crusted Chicken

Here’s a new take on a standard un-fried chicken recipe. Chia seeds add extra crunch and a boost of protein, fiber and minerals.

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp turmeric
  • 1/2 tsp ground pepper
  • 1/2 tsp kosher salt
  • 1/2 cup chia seeds
  • 2 egg whites, beaten
  • 2 tbsp coconut oil
  • 1 lb chicken breast, bones removed, pounded very thin and trimmed of fat (cut into 4 even pieces)

Blend first 6 ingredients in a spice grinder. Pour into one shallow bowl and in another bowl place lightly beaten egg whites.

Heat oil in a skillet and while it’s heating dip chicken pieces in egg wash and then coat liberally in spice/chia mix. Cook chicken pieces about 4 minutes on each side (time may vary based on thickness of chicken breasts). Remove and plate on a plate of greens with lemon slices as garnish.
