From a Tasty Tuesday perspective, you’ve probably been doing an “awful lot of eating” in the name of holiday parties, family get-togethers and festive celebrations. Here’s a simple “light” lunch salad to help counter all the calories you may be consuming during the holiday season.

Hearts of Palm and Tomato Salad

  • 4 cups of mixed greens (your choice)
  • 1 large jar of Hearts of Palm drained and cut into ¼ inch slices
  • 1 large cucumber, peeled and diced
  • 1 ½ cups grape tomatoes, rinsed and halved
  • ½ cup of scallions, sliced thin
  • ¾ cup of chopped fresh cilantro
  • 4 tablespoons of fresh squeezed lime juice
  • Sea salt to taste

Directions

  • Combine all the vegetable ingredients
  • Add cilantro, lime juice and toss well
  • Top each serving with 3 ounces of chicken, fish or tofu, or ½ cup of drained and rinsed beans
  • Add salt to taste

Serves two.

Note:  To make this salad a bit heartier, add ¼ of an avocado to each serving.
