Are You “Creatively Green?”
Want to avoid salad boredom and get the benefit of lots of different nutrients and phytochemicals, the healthy plant-based compounds? Vary your salad base and get green creative. Use iceberg lettuce, kale, romaine lettuce, watercress, Belgian endive, arugula, shredded cabbage, dandelion, and vary your greens throughout the week. Some additional tips:
Consider dumping the greens into a large bowl of cool water to loosen grime and then transfer the greens to a colander and rinse them. This is a better way to clean the greens thoroughly.
Make sure to always dry your greens well or else you dressings won’t adhere to the leaves.
When dressing the salad, add the dressing to the bottom of a large bowl, then add the salad ingredients on top of the liquid and toss gently over and over. Vigorously tossing the salad can bruise the leaves.
For a light and healthy summer dressing, try a Yogurt and Herb Dressing:
¼ cup light Greek yogurt
¼ cup extra virgin olive oil
2-3 teaspoons of water
1 large garlic clove, peeled and rinsed
¼ cup lemon juice
Pinch of kosher salt
¼ cup each of the following fresh herbs: Italian parsley, basil leaves, mint
Blend together till smooth and drizzle 3 tablespoons on each serving of your favorite salad. Yield should be about 16 servings.
