Celebrating Spring with Delicious Recipes From California Walnuts

With the weather warming up, outdoor brunch is a great way to gather family and friends to enjoy time together in the more inviting temperatures.

Thanks to our partners, the California Walnut Board, the following are some delicious and healthy recipe ideas for your first outdoor warm weather celebration, AND they are all walnut-inspired!!

California Walnut Granola Consider using this granola recipe as a topping on plain Greek yogurt.  You will lower the calorie load and have an incredibly tasty parfait.

Citrus Salad With Honey Walnut Ginger Syrup  This fruit-based salad can be an appetizer or yummy dessert.  Oranges, grapefruits and a dash of coconut, plus syrup made with walnuts, creates a mouth-watering dish.

Hummus and Veggie Wraps These wraps are made with protein-rich hummus, whole grain tortillas (you can also use “low carb” tortillas), vegetables and crunchy walnuts, which add an additional boost of protein and healthy fats!  The roasted red bell peppers add a punch of flavor.

Light Farmhouse Walnut Frittata What’s a brunch without an egg dish?  This recipe allows you to choose the vegetables, so you can personalize the dish.  Non-fat yogurt and a light dash of cheese make it a perfect “light” warm weather dish!

New Waldorf Salad Every brunch needs a traditional salad to round it out, and this recipe lowers the calories and saturated fat by swapping out the mayonnaise for nonfat plain yogurt.  California walnuts and crisp apples add the perfect crunch.
