Here's another scrumptious recipe from Ellie Krieger: www.foodnetwork.com/recipes/ellie-krieger/blueberry-almond-french-toast-bake-recipe/index.html.

Those of you who know me well know that I live for French toast! What I love about this recipe is that 1) it uses whole wheat bread (yay for fiber), 2) it doesn't use cream or half & half so you cut out all of that saturated fat and, 3) it uses one of my favorite fruits, blueberries. I did make a couple changes though:

  1. I used two 16" whole wheat baguettes and cut them into 1cm-thick slices, like crostini.
  2. After spraying the pan, I put down one layer of bread and then drenched it in the egg/milk mixture. I created 3 layers using this method.
  3. I used 1.5-times the amount of the egg/milk mixture.

When you make this recipe, be sure to start the night before so that you have 8 hours to soak the bread. Other than that, this recipe is very easy to follow, even for a novice baker like me. This picture is of my pan of French toast. It turned out pretty well, wouldn't you say? ;)

What is Hoopnotica, you ask? Hoopnotica is a high energy, low impact, fat burning form of exercise that uses a hula hoop. Featured on several talk shows, including The Dr. Oz Show, it is quickly becoming the hottest trend in fitness. Even the Mayo Clinic recognizes hooping as a legitimate form of exercise. Waist hooping alone can burn over 300 calories in an hour!

This summer I'm cooking my way through "So Easy", a cookbook by Food Network host Ellie Krieger. All of the recipes in this book are healthy, straight-forward, and (so far) delicious. I love that there are nutrition facts printed right next to each recipe so that you can learn the health benefits of each food.

On Wednesday 25 May 2011, the Teen Battle Chef teams from McKean HS and Laurel HS competed in the Delaware Teen Battle Chef Showdown! The event was held at Newark Natural Foods (www.newarknaturalfoods.com/), the perfect setting for contest using healthy, nutritious whole foods. Staff from McKean HS, representatives from The Nemours Foundation, students from The Central School, and patrons of Newark Natural Foods witnessed as TBC students cooked sauteed chicken and vegetables with whole wheat pasta and homemade pesto.

Each team was challenged to incorporate two mystery ingredients into their dishes. They could chose from orange peppers, yellow peppers, summer squash, and asparagus. Team McKean picked orange and yellow peppers while Team Laurel selected orange peppers and summer squash.

The teams were given 30 minutes to complete and plate their dishes before presenting them to a panel of esteemed judges. The judges included Mrs. Carla Markell, the First Lady of Delaware; Chef Dan O’Brien, McKeans’s Chefs Move to Schools chef; Theresa Pileggi, Director of the Delaware Farm to School Collaborative; an intern from Nemours; and a health education intern from Laurel HS. We learned that Mrs. Markell’s favorite thing to eat is pesto… no pressure!

When the timer signaled that the cooking time was over, both teams presented their dishes with cultural and nutritional information. While the judges tasted and deliberated, the audience also sampled each dish and voted for the one that they believed was the tastiest. When the judges finished their evaluations, they each gave the teams words of praise and criticism. The scores were tallied and the winner was... TEAM LAUREL! Congratulations to Sumaiya and her Teen Battle Chefs. Team McKean and I will challenge Team Laurel to a rematch and hopefully we will come out victorious!
